Kebabs in Turkish Cuisine Available almost any place you stop to eat, kebabs (kebaps in Turkish) come in many guises. Although the ingredient of choice for Turks is lamb, some kebabs are made with beef, chicken, or fish, usually grilled with vegetables on a skewer. Adana kebaps are spicy ground-lamb patties arranged on a layer of sautéed pita bread, topped with a zippy yogurt-and-garlic sauce. Iskender kebaps, also known as Bursa kebaps, are sliced grilled lamb, smothered in tomato sauce, hot butter, and yogurt. Sis kebaps are the traditional skewered cubes of lamb, usually interspersed with peppers and onions. Köfte kebaps are meatballs made from minced lamb mixed with rice, bulgur, or bread crumbs, then threaded onto skewers. |
